Plums usually ripen in large quantities. Having twirled a bunch of cans of compotes, preserves and jams, many are asking themselves: what else to cook from plums for the winter? We offer a solution - plum puree. This sweet and tender dessert will undoubtedly be appreciated by the household. In addition, if there are small children in the house, then homemade puree can compete with ready-made store puree.

Rinse plums thoroughly in water before cooking. This is especially true if the fruit was bought in a store. After that, they are sorted out, sorting out fruits with dark spots, rotten areas and damage.

The washed plums are dried on a towel or in a colander.

Simple recipes for mashed potatoes

Sugar-free natural puree from plums

The only ingredient for this dessert is plum. At the same time, it is desirable that the fruits are well ripened and sweet enough.

First of all, the washed plums should be pitted. It is not at all difficult to do this: each berry is cut into pieces along the "groove", then the halves are opened and the bone is taken out. The fruit is stewed until soft by adding a small amount of water to the saucepan. For 1 kilogram of fruit, 150 milliliters of liquid will be enough.

Soft plums are punched with a blender or passed through a fine-cut meat grinder. So that there are no pieces of skin left in the mass, it is filtered through a sieve.

The dish is ready! You can help yourself! If mashed potatoes were prepared for future use, then it needs to be roasted on the stove for another 5 minutes, and packaged hot in cans.

The RecipeLand channel will introduce you to the recipe for natural plum puree without additional sterilization.

Plum puree with sugar on the stove

If the plums are sour enough, granulated sugar will help to make the puree more tasty. The ratio of sugar to fruit is approximately 1: 4.

If the plums are relatively small, then manual release of each fruit from the seeds will not take very long. If the harvest is calculated in buckets, then the work can be organized differently: whole plums are placed in a saucepan, a small amount of water is added, and the container is set on fire. The lid must be tightly closed. The berries are boiled, stirring occasionally, until soft. It will take about 10 - 15 minutes. The softened fruits are transferred to a metal sieve, and they begin to grind the mass using a pusher or wooden spatula. As a result, the tender pulp will run through the wire rack, and bones and remnants of the skin will remain in the colander.

Sugar is added to the puree. The mass is boiled for 7 minutes, and then packed into a container for storage.

Spicy puree

  • plums - 1 kilogram;
  • granulated sugar - 250 grams;
  • vanilla sugar - 1 sachet;
  • cinnamon - 1 pinch.

The plums, freed from the seeds, are placed in a cooking container, filled with 1/3 of water and boiled until tender. The softened fruit is transferred, using a slotted spoon, to a sieve and wiped. Sugar and spices are poured into a homogeneous mass, the container is placed on the stove. Mashed potatoes should be prepared for another 5 - 10 minutes until the grains dissolve. From the remaining plum broth, you can make jelly or compote.

Puree in the microwave

500 grams of plums are cleaned of drupes. The fruit halves are placed in a deep dish or pan suitable for microwave oven. Add 50 ml of water to the cut. The power of the unit is set at 40% of the maximum value - this is approximately 300 - 350 W. The exposure time is 15 minutes. After the signal, the plum is taken out of the microwave and sent to a sieve. If desired, you can add sugar and vanillin to the puree.

Maria Alexandrova in her video will talk about making mashed plums, cherry plums and sugar for the winter

Homemade plum puree for baby

The technology for making mashed potatoes for babies is similar to the previous recipes, the only thing is that sugar is not added to the dish. If the fruits are very sour, then fructose can be used instead of sugar.

So that the child does not get bored with the plum monopure, its taste is changed with the help of various additives:

  • for the little ones, you can add to the puree breast milk or food mixture;
  • go well with plum peach, apple and pear;
  • to preserve the maximum amount of vitamins, it is necessary to subject the puree to heat treatment at a minimum.

How to save mashed potatoes for the winter

  • Twist under the covers. This method involves filling the hot fruit mass into sterile jars, followed by a sealed twist under the lids. You can disinfect jars by steaming, in the oven or in the microwave. Containers with natural puree, prepared without added sugar, must also be sterilized by placing them in hot water along the "hangers".
  • Freezing. If you have a large freezer in your assistants, then plum puree can be frozen. To do this, it is laid out in small plastic containers, containers or ice molds. Frozen mashed potatoes are put in a common container and sent to the freezer for storage.

Let's make some delicious plum and applesauce for the winter? Delicate, melting in your mouth! And also useful. Suitable for children, diabetics, and people who adhere to proper nutrition... I suggest making it sugar free. Absolutely. But you can do otherwise if you wish. In the course of the recipe, I will tell you at what stage you should add sugar, if you still do with it.

Well, my plum-applesauce for the winter consists of only three ingredients - apples, plum and water ... And we will now talk about them in order. Apples can be taken of absolutely any kind. Of course, it is better that these were delicious applesthat you like. I am not a fan of making "k" from "g". The finished product, regardless of what processing it undergoes, will somehow preserve the original taste of the raw material. Do not dismiss this!

Plums can also be taken in any type and color. I had yellow, which formed the color of the finished product that you now see in the photo. If you take a classic plum, then the color will turn out to be darker and more saturated. Of course, this will also affect the taste. I love yellow a lot more. Therefore, if I buy, then it is her.

The most common filtered water is suitable for plum and applesauce. From the tap, I would not recommend using. However, if you drink a running water without cleaning (in some cities, I know, there is a good one), then here you can take it as well. I do with fresh, but I think the use of boiled is the same.

An important point - to make mashed plums and apples for the winter, you need a blender. Better - with a metal leg. However, if you have a plastic one, you should not despair. However, you will need to wait for the fruit mass to cool down, and only then act.

So, let's study in detail the process of making mashed plums and apples for the winter, a recipe for children, and not only, because many adults will also enjoy this delicious treat with pleasure! And you will not need to buy these cherished bubbles FrutoNyanya, Agusha and others at a considerable price in supermarkets. We will have our own houses, and no worse, but on the contrary - better!

Ingredients:

  • apples - 1400 g (peeled weight)
  • plum - 600 g (purified weight)
  • water - 500 ml
  • sugar - 10 tablespoons or to taste (I didn't put it at all)

Apple puree and plums for the winter recipe for children and not only;)

I washed the apples with a brush, cut off the peel and removed the core with seeds. Chopped finely enough.

She poured in water, put it on gas. Brought to a boil and boiled over medium heat for 15-20 minutes, stirring occasionally.

I prepared a plum - washed it, dried it, took out the seeds. I take it out in the most usual way - cut it into halves and extract the bone. But you can also use improvised means - the body of a ballpoint pen, having previously removed the rod from it. With this approach, you do not need to cut the plum, just ram the middle to remove the contents.
I cut the prepared plum into quarters, and larger specimens into 6 parts. Launched to apples.

Brought to a boil again and boiled for another 10 minutes over medium heat. If you are making mashed plums and apples for the winter in smaller quantities, then it is better to slow down the fire.
She took it off the stove.

Using an immersion blender with a metal leg, I pierced the entire fruit mass in the puree. If your appliance has a plastic leg, then you need to wait until the future plum-applesauce has cooled to room temperature.

I rubbed the whole puréed mass through a sieve.

I put it back in the basin and put it on the gas again. At this point, you can add sugar - 10 tablespoons or more to taste.
After boiling, you need to boil for 8 minutes, stirring. But here, as such, there is no boiling, plum-apple puree begins to shoot like a pea. I ended up cooking for 12 minutes.

In parallel, I sterilized the cans and boiled the lids. I took one 0.5 liter can and screwed it up with a seaming wrench. I also filled 4 sterilized high jars of FrutoNyanya puree - they each contain 280 grams of puree. And one more little one from under Agusha. I tightened the boiled screw caps tightly. And I still have a rosette for testing;)

If you, like me, have made a sugar-free plum and applesauce for the winter, don't worry. The preservative in this case is the natural acidity of apples and plums. The main thing is not to forget about sterilization and try to lay out the puree in the jars carefully so as not to stain the whisk.

Tasty! Mmm ...

It's the beginning of autumn and it's time to harvest tasty and healthy plums, thorns (thorns), and it's also time to harvest mid-late and late apples. This year we didn’t have a particularly rich harvest for apples and plums, but it’s just enough for our children to make delicious homemade applesauce and plum puree. Not so long ago, my sister was replenished in the family, my second nephew was born. It was for him, for her baby son, that my sister Ekaterina prepared a variety of homemade fruit and vegetable purees. Today we will talk about how to make delicious, natural baby puree without additives and dyes from apples and plums with your own hands. In my further recipes, I will tell you how to make delicious baby puree from pears, apples, as well as apples and pears, healthy squash puree and mashed potatoes with carrot and zucchini. We will also delight you with recipes for baby apricot and apple-apricot puree. I think many young mothers, and perhaps grandmothers, will like our recipes. After all, children need to be fed with the most natural products. And homemade baby puree is much tastier, more natural and of course healthier. So, let's cook with us.

Required:

  • Apples are ripe, but firm (flesh without skin and core) - 3 kg.
  • Plum (thorn or thorny, pitted) - 3 kg.
  • Water - 200-300 ml.
  • Sterile jars - preferably 100, 120, 150 ml.

How to make homemade baby puree with your own hands from apples and plums for the winter:

We use apples for making mashed potatoes, dense, but they should be sweet to taste. So the mashed potatoes for children will turn out to be not sour and very tasty. Plums (cake or tornos) will be used ripe, well separated from the pits. Wash apples and plums and dry them. Thinly remove the skin from the apples, cut off the pulp. We sort out the plums from the seeds. We put everything in a suitable sized pan or basin. Pour in 150-200 ml. water and set to cook on low heat. Water should be added so that the boiled fruit puree is not too thick, but not liquid either. Cook the puree for 1-1.5 hours.

Add water as needed during cooking. After 1 hour of cooking, we got this apple and plum puree.

While the baby puree is being cooked, we will prepare the jars by thoroughly washing them with soda and sterilizing them. The easiest way to do this is in the microwave or oven. It is best to use small jars of 100, 120 or 150 ml, since you cannot give a lot of mashed potatoes to small children at once. You can freely buy such jars of mashed potatoes through popular classifieds sites or through advertisements in the newspaper. My sister did just that. So she took a very large number of cans at a rather ridiculous price.

We need to puree the finished baby puree with a submersible blender or simply grind through a sieve, as was done before.

We lay out the apple-plum puree in pre-sterilized jars. We seal the jars and send them under the blanket for 2-3 days until they cool completely. This is how we sterilize the baby puree.
I also want to definitely note the fact that baby puree from apples can be introduced as complementary foods for babies from 4 months of age. Prune puree - from 5 months. And best of all, before starting the introduction of complementary foods, consult with your baby's pediatrician. After all, all children are different, some are artificially fed, and some are fed with natural mother's milk, which is why, the time for introducing complementary foods (child's age) will be different for everyone.

Bon appetit and delicious, vitamin winter - wishes Svetlana and my home site!

Healthy sweet plum puree for the winter - recipes for making delicious and healthy homemade preparations for children and adults. Simple, even without sugar, or more complex with condensed milk or spices - each of the recipes does not take much time to prepare a fortified product.

Every meal requires fresh produce. In our case, before cooking, juicy and ripe fruits will need to be broken in half and pitted. The main thing is that the plums are fresh and free from rot spots. Cooking will require rubbing the fruit through a sieve or passing through a blender or juicer, and then bring the juice with the pulp to a boil and cook until thickened. But it is also not recommended to digest mashed potatoes, such a product loses its useful properties.

Another feature of plum puree is that it is not recommended to use citric acid. Such a fragrant addition will give the puree an attractive taste, but also significantly lighten the final composition. You can not use sugar for cooking, ripe plum will provide the gruel with a sufficient amount of sugars. For those with a sweet tooth, it is recommended to add a minimum amount.

Preparation of the main ingredient

Plum preparation is right choice fruit for making puree. In the market or in the store, they pay attention to several points:

  • The consistency and density of the pulp should be the same throughout the entire inner plane of the fruit.
  • Ripe fruits are distinguished from immature ones by visual inspection of the state of the peduncle. Ripe plums always have a dry brown twig, and unripe plums are colored green.
  • The drain should remain firm, but not firm, with light pressure. Excessive softness indicates overripe fruit, in which the decay process may begin.

Important! Two tips from experienced gardeners. When plum is picked from a mature tree, it will always be much sweeter than that of a young seedling. To remove worms and caterpillars from the fruit, it is recommended to immerse them in a bowl of salt water for several hours. During this time, the worms will crawl out of the plum, and they can be washed off under running water.

Simple recipes for making plum puree

For cooking useful product at home it is recommended to study simple recipesthat can satisfy even gourmets.

Sugarless

For cooking, you need a ripe and juicy plum. The work is carried out in several stages:

  • Free the fruit from seeds. Cut the plum along the depression, divide it into 2 parts and remove the bone.
  • Place the berries in a saucepan, add water at the rate - for each 1 kg of plum, a maximum of 150 mg of water. They put the container on the oven and bring the fruits to softness over low heat.
  • A sieve with fine holes is placed on the meat grinder and the gruel is passed. You can use a blender or rub the mixture through a sieve.
  • Put the product on low heat, bring to a boil and roll up in small sterilized jars.

Such puree can be given to children and patients with diabetes mellitus.

With sugar

For cooking, take plum and sugar to taste. Several operations are performed:

  • the plum is prepared for cooking according to the scheme indicated above, and passed through a meat grinder;
  • put the mass in a saucepan and put on medium heat;
  • bring to a boil, make the fire minimal;
  • add sugar, taste the gruel, if necessary, add more sweets;
  • over low heat, allow the product to boil for another 5-7 minutes, lay it hot on sterilized jars and seal it with a special key;
  • a tag is glued to the jar indicating the variety of plums and the year of preparation, the jars are turned over and wrapped in a blanket until they cool completely.

The product is ready.

Important! Plum puree was not previously sealed with airtight lids. The finished product in the jars was covered with gauze and left open for several days. A dense film formed on the surface, which prevented the ingress of air. Then the jar was covered with foil and wrapped around the neck with thread or closed with a plastic lid

You can try to seal the mashed potatoes this way, but storing it will require a deep cellar with constant coolness.

In the microwave

This technique allows you to significantly save time when cooking several portions for breakfast, but a large volume will require large energy costs, and the gain in time will be insignificant when cooking a product in small portions.

For cooking 1 portion. Prepare 1 kg of ripe plums and 250 g of sugar:

  • the preparatory stage is similar to the previous ones, but the halves of the plum are divided into 2 more parts;
  • the plum is placed in a special dish and in three 7-minute cycles under maximum load, the fruits are brought to half-readiness;
  • sugar is added and stirred before the last cycle.

The puree is ready, it remains to arrange it in the jars and seal it with a metal lid.

Cinnamon

More ingredients are needed. The list of products is given for the preparation of 8 servings of the product:

  • the plums are cut, the seeds are removed, divided into 4 parts, and 1 kg is placed in a saucepan;
  • sugar - 200 g;
  • lemon - 1 pc., rub the zest and squeeze the juice separately;
  • cinnamon - 2-3 sticks of a natural product.

The work is performed according to the scheme:

  • put all parts of the recipe in a container;
  • heated over low heat until sugar is completely dissolved;
  • make the fire stronger, bring to a boil and boil for 10-15 minutes.

Puree can be stored in the refrigerator, served or corked in sterilized jars.

With condensed milk

To prepare 500 g cans of sweet puree, prepare:

  • plum, divided and cut into 4 parts - 750 g;
  • filtered water - 70-80 ml;
  • high-quality condensed milk - 4-5 tbsp. spoons.

The work is carried out in several stages:

  1. The prepared plum is placed in a saucepan, water is added, mixed and placed on the stove.
  2. Cover the container with a lid and cook over medium heat for 20-30 minutes, until the berries are soft.
  3. Grind the mass with a blender until a homogeneous puree is formed.
  4. Spread condensed milk into the mixture, put on fire and constantly stirring, boil over low heat for 6-8 minutes.
  5. The finished puree is laid out in jars and hermetically closed with lids. Banks are wrapped in a blanket and, after cooling, are removed to storage.

From prunes

You will need:

  • water;
  • prunes - 500 g.

Sugar is not needed, ripe plums of this variety have a sugary sweet taste:

  1. The bones are removed, washed under the tap. Each berry should be well washed.
  2. Soak berries in warm waterso that they swell.
  3. A day later, the old water is drained, the fruits are washed under running water and poured so that it covers the berries.
  4. Cover the saucepan with a tight lid and put on low heat. The plum should gradually warm up and simmer in a saucepan for 90 minutes.
  5. The softened berries are placed in a blender and crushed to a homogeneous gruel.
  6. Bring the puree to a boil and blend in jars.

Applesauce is great for baby, dietary or medical nutrition, as it is well absorbed by the body, improves digestion and contains a lot of vitamins. Mixing up applesauce with additional ingredients and seasonings (such as cream, honey, lemon juice, cinnamon, cloves, etc.) makes a healthy and tasty dessert. Applesauce can be served neat or with baked goods, pancakes, pancakes, toast or waffles. Sometimes applesauce is even added to meat and poultry dishes.

Apples go well with many other fruits, berries and vegetables. So, you can make a delicious puree from apples with the addition of carrots, pumpkin, peaches, apricots, bananas, pears, cherries, plums and other ingredients. Depending on the type of apples used, the finished puree can have a different consistency, color and taste. The principle of making applesauce is very simple: cut the prepared fruit, put it in a saucepan, fill it with water and cook until tender with added sugar. If mashed potatoes are prepared for babies, sugar should not be added. Also, for the smallest fruits, sometimes they are not cooked, but simply pureed with a blender until smooth (sometimes with the addition of other fruits or vegetables).

Applesauce is often prepared for the winter. To do this, boil the fruit mass and roll it into sterilized jars. The jars are stored in a cool, dark and well-ventilated area. Canned applesauce is best made from sour apples.

Applesauce - preparing food and dishes

To make applesauce you will need: a saucepan, cutting board, knife, bowl and blender. If you have a special apple peeler, you can easily and quickly peel off the skin in a thin layer and remove the seeds. The finished puree is transferred for storage in the refrigerator in a clean jar or laid out on bowls and immediately served (if it is intended for dessert).

Apples must be sorted out, rejecting spoiled or rotten fruits, washed and dried. Then you need to peel the peel and remove the cores, if you come across "eyes" - cut them out. In the same way, you need to prepare the rest of the fruits and vegetables used in the recipe. Measure out the required amount of sugar and other additional ingredients in advance.

Which variety should you choose?

For baby food it is better to use domestic varieties - "Simerenko", "Antonovka", "White filling". Better if these are fruits from their own garden or purchased in season. But it is better not to buy glossy, ideal-shaped fruits of foreign varieties (Golden, Jonathan and others). Not only have these fruits been processed with chemicals, they can be genetically modified foods.

If you use sour apple varieties (for example, "Antonovka") for making mashed potatoes, add sweeter fruits - pears, bananas.

Give preference to fruits with irregular shapes, irregular colors, wormholes and barrels. But it is better to refuse glossy fruits with a smooth, uniform surface.

How many months should you introduce applesauce?

Apples can be introduced from 6 months for infants and from 4 months for art children, but it is better to postpone apple complementary foods for several months and first treat the crumbs with vegetables and cereals.

This is due to the fact that after sweet applesauce (if given as the very first complementary food), the baby is unlikely to want to eat tasteless vegetables or cereals.

Apple puree recipes

There are many recipes for baby apple puree. Someone prefers to cook monopure in order to let the child feel the true taste of the product, someone mixes it with other fruits (bananas, pears) or vegetables (carrots, pumpkin).

Fresh apple puree

This is the easiest recipe for applesauce for babies.

Wash the fruit, peel, remove seeds and partitions. Next, grate the fruit, and then chop it thoroughly in a blender. You can grind the fruit in a meat grinder, but make sure that it is perfectly clean - a piece of spoiled meat that accidentally gets into baby puree can lead to very dire consequences.

Classic applesauce

This recipe is suitable for those who are going to make a puree "at once" and not close it for the winter. To prepare this dish, you will need one fresh apple and 5 minutes of free time.

Dip the apple in boiling water and cook for a couple of minutes. During this time, the pulp will have time to soften. Peel the cooled fruit, remove the seeds and core, put the pulp in a blender and chop thoroughly. Applesauce for baby is ready!

Some people advise adding ½ spoon of sugar to complementary foods, but if you are using sweet varieties of apples ("Cinnamon", "Melba"), then this measure is unnecessary.

This puree can be mixed with bananas, pears, zucchini, pumpkin, carrots and other vegetables and fruits.

Applesauce in a slow cooker

How to prepare such complementary foods? You will need one apple. Peel the fruit of the peel, seeds and partitions, cut into medium pieces and put on a grid in a slow cooker. Turn on the "steam" mode and cook the fruit for 15-20 minutes.

Mash softened fruits with a spoon or beat with a blender. The finished puree should be slightly cooled and served warm to the baby.

Applesauce in the oven

This is another useful and quick way make mashed fresh apples with your own hands. Use two medium apples for one serving. Use a knife to cut the core without cutting the fruit in half. Place the prepared fruit in muffin tins to prevent the juice from leaking out, and place in the oven for 15-20 minutes.

When the apples are soft, chill them slightly, spoon out the pulp and grind it in a blender. The applesauce is ready!

If your baby already eats almost all basic foods, the fruit can be stuffed with rice, millet, cottage cheese before baking.

Applesauce for the winter

To prepare 1 kilogram of puree, you will need:

  • sour apples - 1 kg;
  • sugar - 1 spoon;
  • water - 0.5 liters.

If you are preparing puree for the smallest baby, it is better to replace white sugar with high-quality cane sugar.

Peel the apples, seeds and cores, cut and grind in a blender. Put the prepared mass in a saucepan, pour in water, add sugar and cook over high heat until boiling. Then reduce the heat and cook the puree for another 20 minutes.

During this time, wash and sterilize the jars and lids. Better to take small jars at a time.

Put the puree in jars, close and put in a dark place. As you can see, cooking it is not at all difficult.

What can you combine an apple with?

Applesauce can be combined with almost all vegetables and fruits. The most popular and delicious combinations are presented below.

How to choose a ready-made puree?

It is quite difficult to choose high-quality baby food, as you can always come across a jar with a low-quality product. Nevertheless, compliance with a number of rules will allow you to buy only the best for the baby.

  1. Always look at the expiration date of the item. If it has expired, leave the jar in the store, or better inform the seller or manager about the stitching.
  2. Avoid preservatives! In baby food, it is allowed to use only ascorbic acid (vitamin C).
  3. It is better not to buy a product for babies that contains sugar or starch. The first is undesirable for the child's body, the second can cause allergies.
  4. Check the label. If the manufacturer has indicated a specific age range (for example, from 6 months), then it is better not to give the product to the crumbs earlier than the prescribed age.
  5. Pay attention to domestic brands - FrutoNyanya, Spelenok, Babushkino Lukoshko - and foreign brands - Humama, Hipp, Gerber, Fleur Alpine. In addition to apples, water and vitamin C, they have no additional components.
  6. But the manufacturers Semper and Agusha add starch to the product to thicken it. Heinz puree also contains lemon juice, which can cause allergies.

If possible, make the puree yourself. Such a dish will bring many times more benefits to the baby than purchased complementary foods.
