Such a dish, depending on additional ingredients, can become a true culinary masterpiece and a worthy decoration of the festive table.

Cucumber, egg and green onion salad is best cooked in the spring and summer, as this is when you can get the most out of your vegetables. This salad is prepared in a matter of minutes. Use mayonnaise sauce or sour cream as a dressing. By the way, in everyday life this dish is called peasant.

Composition:

  • 4 eggs;
  • 1-2 cucumbers;
  • a bunch of dill, parsley and chives;
  • 2 tbsp. l. sesame seeds;
  • salt;
  • mayonnaise.

Preparation:

  1. Put chicken eggs in a saucepan, pour filtered water, put it on fire and bring to a boil.
  2. After that, lower the heat a little and cook the eggs hard-boiled for 10 minutes.
  3. Cool them under running water, remove the shell and cut the eggs into cubes.

  4. Rinse fresh cucumbers with filtered water.
  5. Remove the remaining moisture with a paper towel.
  6. Grind the cucumbers into cubes. If you wish, you can remove the skin from them.

  7. Finely chop the washed chives, dill and parsley with a knife.
  8. Add aromatic juicy greens to the salad.

On the eve of the holiday, each hostess racks her brains about what dishes to include in the menu. What salad to cook? Green onions, eggs, rice - a classic bunch of products. Add a little imagination, love and a couple of interesting ingredients, and in the end we will have an original dish with an amazing taste.

Composition:

  • 0.3 kg of crab sticks;
  • green feather onions - 1 bunch;
  • canned sweet corn - ½ can;
  • 1 fresh cucumber;
  • mayonnaise sauce and salt to taste;
  • 2 eggs;
  • 1/3 Art. rice cereals.

Preparation:

  1. Boil hard-boiled chicken eggs, cool under running water and remove the shell.
  2. Rice grits are well washed and boiled until tender.
  3. Then we put it in a colander and leave it for a while so that the excess liquid glass.
  4. Decant the juice from canned dessert corn.
  5. We wash the herbs and fresh cucumber, dry.

Composition:

  • 10-12 pcs. radish root crops;
  • 2 pcs. chicken eggs;
  • to taste salt, ground paprika, spices;
  • for refueling - refined olive oil;
  • a bunch of green feather onions, dill;
  • a few basil leaves;
  • a bunch of arugula;
  • one head of onion.

Preparation:

  1. Put fresh chicken eggs in a thick-walled dish and fill them with running water.
  2. We put on fire and after boiling, cook for 8-10 minutes.
  3. Cool the eggs under running water, remove the shell.
  4. Grind the boiled eggs into slices or cubes. If you took quail, then you need to cut them in half. Only quail eggs will need twice as much.
  5. Rinse the radish thoroughly, dry it.
  6. We cut off the block parts, and chop the root crop in circles.
  7. Wash the arugula, dill and basil.
  8. Chop the arugula with your hands, and chop the rest of the greens, including the chives, finely with a knife.
  9. We combine all the ingredients in a salad bowl.
  10. Cut the onion head into half rings.
  11. Add to salad.
  12. Sprinkle with salt and ground paprika.
  13. Add other herbs and spices to taste.
  14. Pour over the salad with refined olive oil and mix gently with your hands.
  15. Vitamin salad is ready to eat.

The delicious taste of a cold snack

Try making a salad with cod liver for a change. Combined with juicy onions and eggs, you get an incredibly tasty dish.

Composition:

  • 1 can of canned cod liver;
  • a bundle of a green beam;
  • 4 eggs;
  • a pinch of lemon zest;
  • a few drops of freshly squeezed lemon juice;
  • salt.

Preparation:

  1. Boil chicken eggs.
  2. After cooling, clean them and cut them into small cubes.
  3. Combine with canned cod liver and mix well.
  4. Add chopped green onions, salt, citrus zest and freshly squeezed lemon juice.
  5. Mix well and serve, it is possible with a slice of bread.

For me, this simple salad of cucumber, eggs and green onions has an interesting aura. Now I will try to explain why. We prepare it, as a rule, in the spring, after Easter, when there are many painted hard-boiled eggs in the house, and everyone simply refuses to eat them. In the garden, the arrows of the young green onion are already green with might and main, and truly fresh cucumbers finally appear in the vegetable stores - small, in pimples, bright green with yellow flowers at the tips. When all this happens at about the same time, then it's time to make a salad with green onions, fresh cucumbers and an egg.

The salad has not only an interesting aura, but also a texture. It is crispy and soft at the same time. Naturally, fresh cucumbers and onions give it a crunch, and eggs mixed with the dressing give it softness. For her, you can use your choice: mayonnaise, sour cream, a mixture of these two components, or natural yogurt. Season all this happiness with coarse salt. My family can eat such a salad every day, for breakfast, lunch and dinner.

But sometimes I modify it by adding other ingredients to choose from - tomato, canned corn, crab sticks, green pea or an apple. It turns out even juicier. It is interesting to combine these vegetables with seaweed, and most importantly - extremely useful! Whatever set of foods is in your salad, it is still a real vitamin bomb and an explosion of taste! And for an incredible aroma, you can finely chop fresh dill and sprinkle an elegant, bright salad on top.

  • eggs - 2 pcs;
  • green onions - 1 bunch;
  • fresh cucumber - 1-2 pcs;

  • sour cream.

How to make a salad and what is the best way to season it

Tip: If you or someone in your family adheres to the principles of diet, then I will share with you the secret of my favorite salad dressing. It is necessary to mix flaxseed oil in a small container (you can also take olive oil, grape seed oil or ordinary vegetable), soy sauce and squeeze a quarter of a lemon there. You don't need to salt, because soy sauce is so salty. For a spicy flavor, I add some ground pepper mixture. If you have peppercorns, this is even better. Grind it in a mill or mortar. This wonderful dressing goes well with absolutely any salad.


Use my simplest recipe and make this spring green salad on a regular basis, because it contains so many vitamins. And after a long winter, green herbs, spices and vegetables are very necessary for our body.
