    I myself wondered what is the fundamental difference between cupcakes, muffins and cupcakes? As I understand it, the difference, in principle, is not so significant and critical as to greatly panic that you will somewhere incorrectly call a muffin a cupcake or a cupcake.

    Cupcakes. Traditional French pastry. At first, the butter was mixed with sugar, and then other ingredients were gradually added, due to which the cupcakes turned out to be porous, tender and airy.

    Muffins. English pastries, the basis of which: "wet" ingredients are mixed with wet, and "dry" with dry. In this case, the dough is kneaded by hand, and the airy delicate texture is created by using a baking powder or soda.

    The dough during baking will increase significantly in volume and the muffins will exceed the volume of the molds. There is no need to grease the molds. One of the advantages of such silicone molds is that flour products can be easily removed from them. In addition, there is enough fat in the dough for cupcakes, which will allow you to additionally play it safe in case the cupcakes “stick” to the surface of the molds. But if you don’t have a pack of gluttonous lovers of homemade sweet pastries living in your apartment, then you can melt another half a bar of chocolate in a water bath and pour the muffins with the resulting icing. When the chocolate hardens, it will form a thin hard crust that will break when bitten - such a rather unusual effect that children really like. If you add a little butter to the chocolate, then the glaze will turn out soft and shiny. I like this more.

    This recipe could be a hit in your culinary collection. One of the hottest delicious cupcakes that are known to me. Ripe fresh oranges go into the dough. You will learn how to peel them with the most ordinary grater. Find out how incredibly fragrant the dough can become if you add just a little bit of fresh zest to it. The cupcake turns out to be bright red, the smell is intoxicating, the taste is magical. Recipe for two medium-sized silicone molds. Can also be baked into small muffins. Ingredients include homemade candied orange peels. But you don't have to add them.

    Ingredients

    • 1 large orange
    • 2 eggs
    • 120 g sugar
    • 180 g flour
    • 100 g butter
    • 1.5 teaspoons of baking powder
    • a large handful of candied orange peels

    Let's melt the butter first. It must cool before we add it to the dough.

    4 Mix eggs with sugar. I usually use a blender - it turns out such a liquid foamy mixture.

    Remove the zest from the orange using a regular fine grater.

    Cut the orange in half and squeeze out the juice.

    The oil has already cooled down, add it to the dough. Add flour mixed with baking powder. Pour out the orange juice.

    We pour the zest. We mix everything. We get the most fragrant pale orange dough.

    It seems to be everything. But what is a cupcake without a twist? In order not to break our orange harmony, we will add not raisins to the dough, but sweet candied orange peels. I want to warn you right now. You can, of course, do without candied fruits. But it will already be a completely different cupcake. This is exactly the case when it is the additive that makes the taste of the whole. In general, I keep a jar of candied oranges especially for such occasions.

    We cut the zest into small cubes, mix with the dough.

    We spread the dough in the form. I want to warn you: the cake turns out so tender that it can be difficult to remove it from the usual steel form whole and unharmed. Therefore, either use a form with a non-stick coating, or silicone - which is ideal, because any pastry can be easily removed from them. You need to bake a cake at a temperature not higher than 140 degrees. The baking time varies from 1 hour to 1 hour 20 minutes. Check readiness with a wooden stick. Pierce the cupcake. If the stick remains dry, then everything is ready.

    The cupcake rises very well, it turns out inexpressibly tender, with a porous fluffy texture. The crust becomes sugary and sometimes even crispy. But what can I say ... Try it yourself and you will see - this is a miracle. Little culinary miracle.
