  • chicken liver 700 grams;
  • fresh lard 200 grams;
  • fresh zucchini about a kilogram;
  • chicken eggs 2 - 3 pieces;
  • onions 2 - 3 heads;
  • flour 400 grams;
  • starch 200 grams;
  • stale bread, several slices;
  • salt, black pepper;
  • vegetable oil for frying.

Preparing lard and liver. The onion can be twisted with a meat grinder, or you can simply chop finely depending on your preference. We get rid of the zucchini from the peel and seeds, grind. It is better to take sticky rice, for example, round Krasnodar, then you can do without flour. For originality, you can add three tablespoons of soy sauce to the minced meat - the taste is simply amazing. Tortillas are fried without any frills, but it is better to serve them with sauce. For him, finely rub a cucumber and a small piece of Parmesan (or other favorite cheese), mix and combine with half a glass of low-fat sour cream. If you also add finely chopped fresh herbs, in general it will turn out amazingly.

Liver-mushroom delight

This time, French liver pancakes are offered. The recipe (its successful embodiment looks at you with the photo) pleases with an exquisite result worthy of respect even for an avid gourmet. Chicken liver is recommended, but I think its other types of taste will not spoil. A kilogram of offal is taken half a kilo of champignons. They should be chopped and sautéed with finely chopped onions. If you want uniformity, you can put the mushrooms in a blender along with the liver and two more onion heads. If you want to more clearly feel the mushroom note, add the mushroom frying to the ready-made minced meat. The mass is peppery, salted (you can add other seasonings), two eggs are driven in, flour is added, the "dough" is mixed - and you can start baking. The French advise to do this quickly so that a crust forms immediately, and after another ten minutes put out. But you can just fry it well.

Gourmet pancakes

When preparing beef liver liver fritters, the recipe very often advises adding vegetables to the minced meat. And the most common option is with zucchini. However, we offer a much more interesting and elegant version. For her, a third of a kilogram of offal is taken, a medium-sized onion and a handful of dried apricots (if it is too tough, the dried fruit should be scalded or soaked until soft). All these components are ground into minced meat. Fresh juicy zucchini is rubbed coarsely; excess juice is filtered through a colander. Both masses are mixed, the minced meat is seasoned (in this case, the use of ground red pepper and soy sauce will be successful) and supplied with flour. And we already know how to fry such a dish.

An unexpected combination

If you are making pork liver pancakes, it is a good idea to dilute it with something. Unlike beef or chicken, pork offal is somewhat fatty. Cabbage makes it surprisingly tender pancakes. It should be taken almost half the amount compared to the liver. The result of the work will be even more successful if you add a few cloves of garlic and carrots to the minced meat. All components are passed through a blender. In addition to flour and spices, a spoonful of medium fat sour cream is also added to the finished mass. We knead diligently, check for salt and spices, and then bake "pancakes".

Fritters with baked

This is the name of the filling, which does not hide inside the culinary masterpiece, but is laid out on liver pancakes (photo below). Minced meat can be made without any additions, only from liver, onions, eggs and flour. The main zest will be brought by the heat. For him, you can offer several options:

  • finely chopped fried mushrooms with onions;
  • steep eggs, crumbled with herbs (green onions are especially good in this regard);
  • grated cheese with garlic.

Vegetables are also suitable - both raw (with bell pepper, for example, you get the effect as if you baked it in the oven), and fried (zucchini, cauliflower, etc.). Pancakes are fried with baking in this way: the cakes are laid out in a frying pan, the filling is neatly attached on top of them. When the bottom grasps and turns brown, the pancakes deftly flip to the other side. If you want, you can also put the heat on top. Then fry the "pancake" under the lid.

There are people to whom the original product seems bitter or does not like its specific taste, and therefore they are in no hurry to cook pork or beef liver pancakes. The recipe advises not to give up this delicious dish, but to soak the liver for half an hour in milk. Aesthetes and gourmets can substitute wine for milk - the taste of the cakes will turn out to be absolutely noble, especially if you pour a little wine after soaking into the finished minced meat.

Liver cake is also an interesting move. According to the selected recipe, pancakes are prepared (you can make them larger, like pancakes), stacked and smeared with mayonnaise “cream” with crushed garlic and herbs. Wait until soaked and serve.

To make more lush pancakes, flour in them can be replaced with semolina, only you need to take more of it than flour: for half a kilogram of minced meat about a glass. You will get very tender liver pancakes from beef liver. The recipe only recommends that after mixing all the ingredients, stand the "dough" for 20-30 minutes so that the cereal swells.

Fry liver pancakes quickly, about two minutes on each side. To overexpose them in a frying pan means to lose their taste and softness: you get a rather bland, harsh "sole".
