Don't know what to feed your beloved household? Offer them chicken liver pancakes. Tender, juicy, tasty - they will go well with any side dish. Preparing pancakes is very simple, anyone can do it. In just a few minutes you will have a satisfying and healthy meal. And it doesn’t matter whether they are a type of liver cutlets with semolina or not. The main thing is that it is really very tasty.

  • chicken liver – 700 g;
  • onion – 150 g;
  • carrots (fresh) – 150 g;
  • egg – 2 pcs.;
  • flour – 3 tbsp. spoons;
  • semolina - 3 tbsp. spoons;
  • vegetable oil – about 100 ml;
  • salt – 1 teaspoon;
  • ground black pepper – ¼ teaspoon.

Recipe for chicken liver pancakes with semolina

Chicken liver is best for making liver pancakes; it is from this that they turn out incredibly tender, literally melting in your mouth, but you can also use beef.

Rinse the liver thoroughly and cut off all films. Pass through a meat grinder.

Peel the onions and carrots and also chop them in a meat grinder.

In the absence of this kitchen appliance, grate the vegetables on a fine grater and chop the liver in a blender.

Mix meat and vegetable components.

Add raw eggs, flour, semolina, salt and pepper to the mixture.

Mix all ingredients thoroughly, leaving no lumps.

At the beginning, I miscalculated the volume of the dishes, so I had to put everything into a saucepan.

Heat a small amount of vegetable oil in a frying pan (2 tablespoons is enough), medium heat.

Using a ladle, scoop out a portion of the resulting minced meat and place it in a frying pan, forming a cutlet of the desired shape. Take into account the fact that the minced meat will spread a little over the surface, so spread it a little at a time.

Fry the pancakes for 3 minutes with the lid closed.

Then turn over to the other side and fry for another 3 minutes.

Place the fried liver pancakes on a large flat dish and serve hot. Very tasty served with sour cream sauce. And don’t forget about vegetables; they go perfectly with meat dishes.

Boiled or fried liver is a healthy dish. True, not all gourmets love this by-product in this form. But everyone at home will probably enjoy chicken liver pancakes. They always turn out very tender, nutritious and appetizing.

Ingredients: 420 g of already defrosted chicken liver with drained juice, chicken egg, table salt to taste, 2.5-3.5 tbsp. spoons of white flour, favorite spices.

  1. The first step is to prepare the liver. She gets rid of films and everything unnecessary, after which she uses a blender.
  2. An egg is driven into the resulting mass. It is salted and sprinkled with spices. Gradually pour flour into the dough to bind the ingredients. Its quantity must be regulated, monitoring the consistency of the mass. If you overdo it with the amount of flour, the taste of the pancakes will turn out to be too “bready”.
  3. All ingredients are mixed well. Next, you can start baking pancakes.

Each flatbread is fried in hot oil on both sides.

Recipe for cooking with semolina

Ingredients: half a kilo of chicken liver, 110 g of semolina, chicken egg, 60 g of wheat flour, onion, table salt, a mixture of colored dried peppers.

  1. The liver along with peeled onions is crushed using a special blender attachment. Using a fork, beat a raw chicken egg into the resulting mass.
  2. The resulting homogeneous minced meat is added to taste and sprinkled with a mixture of dry colored peppers. You can use any other seasonings according to your own taste.
  3. Lastly, the remaining bulk ingredients are added to the mass - semolina and pre-sifted flour.
  4. The ingredients are mixed well. The result will not be too thick.

Chicken liver pancakes with semolina are fried in hot oil on both sides. This component will add fluffiness and juiciness to them, swelling during the cooking process.

Liver pancakes with mushrooms

Ingredients: a kilo of chicken liver, 4 onions, 2 chicken eggs, 3 tbsp. spoons of high-grade flour, half a kilo of fresh champignons, any spices, table salt.

  1. First of all, fresh mushrooms are thoroughly washed, cleaned and finely chopped. Next, they are poured into a frying pan along with small onion cubes (1 piece) and thoroughly fried in oil. You need to cook the food until all the liquid has evaporated from the frying pan and they have acquired a pleasant color.
  2. Use a blender to chop the remaining onion and liver. You can simply pass these products through a meat grinder.
  3. The slightly cooled contents of the frying pan are added to the twisted mixture. Eggs are driven in there, flour, selected seasonings, and salt are added. If the mass turns out to be liquid, you can increase the amount of flour.
  4. The resulting minced meat is scooped up with a spoon and placed on a well-heated frying pan. The pancakes are fried on both sides.

The finished dish can be placed in a pan, poured with a small amount of water with tomato paste and simmered for 10-12 minutes.

How to cook with rice?

Ingredients: 630 g of chicken liver, raw egg, 90 g of high-grade flour, medium onion, a glass of pre-cooked rice, table salt, aromatic herbs.

  1. The first step is to process the liver and onions. These components are placed in a blender bowl and then ground well until smooth. This will be the basis of the minced meat for the pancakes.
  2. Ready and slightly cooled rice is added to the mixture. The ingredients are mixed again.
  3. A raw egg is driven into the resulting mixture, aromatic herbs and table salt are added. The last thing to add is pre-sifted wheat flour. The mass turns out quite thick.
  4. To prepare the pancakes, place the minced meat in heated oil by the tablespoon. The flatbreads are fried on each side for about 3-4 minutes.

The finished dish is served with garlic sauce based on low-fat sour cream or unsweetened yogurt. It’s delicious to try these pancakes even with a portion of regular light mayonnaise.

With smoked lard

Ingredients: 630 g chicken liver, 1-2 onions, 2 chicken eggs, 120 g smoked lard, 2 tbsp. tablespoons of fat sour cream, half a glass of high-grade flour, a pinch of ground black pepper, table salt.

  1. First you need to process the chicken liver - remove the films and places where the offal came into contact with the gall bladder. Other excess parts that can spoil the taste of the dish are also cut off from the liver.
  2. Add coarsely chopped onion to the bowl with the liver. Chicken eggs are driven in immediately.
  3. Smoked lard is cut into small cubes. It is also added to all other components listed.
  4. Only after this the prepared components are broken up with a suitable blender attachment. You can also use a regular meat grinder.
  5. Pre-sifted flour, salt, pepper, and sour cream are added to the resulting liquid minced meat. After the next stirring, you can start baking the products.

Fry on both sides until golden brown.

Pancakes with carrots

Ingredients: half a kilogram of chicken liver, medium-sized raw carrot, onion, raw chicken egg, table salt, ground black pepper, any favorite seasonings.

  1. The liver is washed well, gets rid of film and veins, and then twisted together with carrots and onions in a meat grinder. You can also use a special blender attachment for this.
  2. Seasonings and eggs are added to the resulting mixture. It is salted to taste. You need to actively mix all the ingredients until even the slightest lumps disappear.
  3. Immediately after this, you can begin the frying process. The pancakes are cooked for a couple of minutes on each side in hot oil.

Ready-made liver pancakes are served with any side dish. They can also become the main dish. To do this, it will be enough to complement the products with vegetable salad and a suitable sauce to your taste.
