Prepare the syrup from water and sugar - heat it over low heat for about 40 minutes. Pour the gelatin with water and leave to soak. Afterwards we put it in a steam bath.

Heat the berries in a frying pan until softened.

Beat the whites until a stable, fluffy foam forms, then add the syrup in a thin stream.

Rub the berries through a sieve to make a puree.

Mix the starch and powder together, then pass through a sieve, forming a thin layer on parchment paper.

Divide the protein mass into 2 parts. Pipe stripes with one using a pastry bag, mix the second with berry puree and also make stripes. After a couple of hours, cut into pieces and roll in the powdery-starch mixture.

Chocolate treat

Homemade marshmallows can be made not only from apples or berries - it can also be chocolate, with the aroma of honey.

  • gelatin - 10 g;
  • apple puree - 200 g;
  • granulated sugar - 150 g;
  • dark chocolate - 100 g;
  • honey - 100 g;
  • cocoa - 40 gr.

Let's prepare the syrup: let the gelatin swell, then heat it with water and sugar. Let cool.

Melt the broken pieces of chocolate using a water bath method. Using a mixer, process the syrup, chocolate mass, puree and honey. Pour into the mold and leave to set in the refrigerator for at least an hour. Cut into pieces and roll in cocoa.

Strawberry marshmallows

Strawberries are a delicious berry. It produces the most delicate, very tasty marshmallow roses. Before serving, you can sprinkle with powdered sugar.

  • 400 g sugar;
  • egg (white);
  • 8 grams of agar-agar;
  • 200 g applesauce;
  • 150 g strawberry puree;
  • 1660 ml water.

First of all, mix the agar with water. Leave for a quarter of an hour. Combine with sugar, boil, and reduce slightly.

Combine applesauce and strawberry puree with a mixer, followed by egg whites. Continue beating until a thick mass forms. Add the syrup in a thin stream without stopping the mixer. Use a pastry bag to pipe marshmallows and sprinkle with powdered sugar. Leave to harden.

Cooking recipe according to GOST

  • 4 apples or 250 grams of ready-made puree;
  • 250 g sugar;
  • protein;
  • vanilla;
  • 475 grams of sugar for syrup;
  • 160 g of water;
  • 8 grams of agar.

Prepare the agar immediately by soaking it in water. If necessary, prepare fruit puree if you don’t have one prepared in advance. Combine the puree with sugar and vanilla using a mixer. If the puree is still at a warm temperature, then leave it to cool for a while.

We continue to prepare the syrup: add sugar and the remaining water to the agar and stir well, heating it over low heat. Boil.

Beat the puree with the egg white, then add the syrup and beat until smooth. The mass will look like a meringue dough.

Use a pastry syringe to drop small marshmallows onto the parchment and leave them to harden.

Classic diet marshmallows

The basis of marshmallows is gelatin and sugar. To prepare regular marshmallows, you need to take 25 grams of gelatin, 1 teaspoon of citric acid, 300 grams of sugar, 1 teaspoon of soda and vanillin. You need to pour half a glass of preheated water, pour in the gelatin and leave it alone for a while.

Then you also need to mix half a glass of water with sugar and cook on the fire for 8-10 minutes. After this time, the swollen gelatin must be folded into the resulting syrup. This mixture must be stirred with a mixer for seven minutes. After adding citric acid, you need to stir again with a mixer, but for five minutes.

Next, if you want to feel the vanilla taste, you should add more vanillin. Add soda to the mixture. And again you need to turn on the mixer, but for four minutes. So, what came out in the end was a fairly thick white mass. The molds must be greased with oil so that the marshmallows, when ready, can be safely removed without damaging their appearance. After oiling, you need to lay parchment paper. But if you have silicone molds, you won’t need it.

After this procedure, you can already pour the mixture into molds and put it in the refrigerator for a day or so. After this time has passed, you can take out the molds. You need to remove the marshmallows with a knife. Next, the finished dietary marshmallows must be completely rolled in powdered sugar and you can start eating.

Diet marshmallows with apples

Perhaps it’s worth considering another way to make dietary homemade marshmallows. It will be much different from the one described above.

To prepare, you need to take a large apple, weighing about 200 grams, and divide it into four parts. The core, of course, needs to be cut out. The apple needs to be baked in the oven for half an hour, and the temperature should be 180 degrees. At this time, you need to take two egg whites and beat them together with 10-20 grams of honey using, again, a mixer.

You can now remove the baked apple from the oven and mash it with a fork. Add 5 grams of gelatin to the water and heat in the microwave. After all the steps, you need to mix all the masses together, pour into molds and place directly in the refrigerator. You need to wait about two hours for it to be ready.

An alternative would be another recipe for dietary marshmallows at home. According to it, you need to take one and a half teaspoons of agar and dissolve it in cold water in the amount of 100 milliliters. Again, you need to take apples, but two of them, cut them into several parts, remove the core and bake again, but only for five minutes. Next, you need to puree them using a blender.

Heat the agar for a minute, stirring it constantly. With the addition of applesauce, it is necessary to boil and remove from heat. Next, you need to take two whites, beat them well and, without stopping beating, gradually add a mixture of agar and apple. When everything is united, you can already put it in molds and leave to cool at room temperature.
