Good day, dear readers of the “Consumption” blog. I already wrote about how to cook on the blog, but this was a description of a classic recipe using yeast dough. Preparing this type of pizza takes quite a lot of time.

But today we decided to make a quick pizza for dinner, making the dough with kefir. This pizza can be prepared in half an hour, 25 minutes of which will be baked in the oven. The recipe for quick pizza dough with kefir is very simple; my daughter and I quickly completed it today.

Cooking method

One portion of dough is enough for a small frying pan or a small baking sheet, so we made three portions at once. If you have a large family, you don’t have to waste time on trifles, especially since pizza is a dish that is not a sin to have for dinner a second time.

So, beat the eggs with salt, pour in kefir, add soda slaked with vinegar, and mix everything thoroughly. Stirring constantly, gradually add flour. The consistency of the pizza dough should be like thick sour cream, do not overdo it with flour, it is better to add it later than to add a lot.

For the filling, crumble everything as you like. Onions and mushrooms, in my opinion, are better fried, although you can do without it. For three servings we needed the filling: 400 grams of sausages, 150 grams of cheese, 4 small tomatoes, two onions and one can of canned champignons. Mayonnaise and ketchup to taste.

Grease a baking sheet with vegetable oil and pour out the dough. The dough, although liquid, holds the filling well. Draw a mesh of ketchup on top. Pour chopped sausages or sausage onto the dough, lay out fried mushrooms and onions, and place sliced ​​tomatoes on top. Lubricate the last layer with mayonnaise and sprinkle with grated cheese.

Place the pizza in the preheated oven and bake at 200 degrees for about 25-30 minutes.

Kefir pizza is much easier to prepare than all other varieties of this dish. If you follow all the proportions and recommendations specified in the recipes, the dough will turn out very tender and elastic. The following recommendations how to cook pizza with kefir, will help you ensure that the base and filling meet all the chef’s expectations:

Secret No. 1. To prevent the edges of the pizza from burning while cooking in the oven, they need to be additionally greased with olive oil.

Secret No. 2. The kefir dough should not just be stirred, but lightly beaten so that there are no lumps left in it.

Secret No. 3. It is not necessary to quench soda for kefir dough with vinegar; kefir itself can handle this.

Secret No. 4. After adding soda to kefir, it is better to leave it for 5-10 minutes to react.

Secret No. 5. When preparing kefir pizza dough, it is important not to add too much flour. It should be soft and elastic or completely liquid, like rich sour cream.

Secret No. 6. It is better not to roll out the pizza dough with a rolling pin, but simply stretch and knead it with your hands.

Secret No. 7. If desired, kefir can be replaced with sour cream.

Secret No. 8. Before baking the pizza, let the dough rest a little (at least 10-15 minutes).

Thin and tasty pizza dough can be prepared without adding eggs! This will not only save money, but also significantly reduce the calorie content of the dish. The base will be sweetish and very tender, so it is best to use meat filling and a small amount of sauce with it.

Ingredients:

  • ½ cup kefir;
  • 1/3 cup olive oil;
  • 2 tbsp. l. Sahara;
  • 1 tsp. salt;
  • 1/3 tsp. soda;
  • 1 ½ cups flour.

Cooking method:

  1. Add soda to kefir and let it brew for 10 minutes.
  2. Add salt, olive oil and sugar, mix well.
  3. Gradually adding flour, knead an elastic dough that easily sticks to your hands.
  4. Wrap the dough in cling film and refrigerate for 30 minutes.

Kefir dough in the oven becomes very fluffy and soft, which is highly valued in real homemade pizza. This recipe features a slightly unusual filling of canned tuna and spicy tomato sauce. However, you can choose any other filling depending on your preferences.

  • 1 pinch of sugar;

  • 1 pinch of salt;

  2. Pour kefir and mayonnaise into the resulting mixture.
  3. Quench the soda with vinegar and pour into a common plate, mix everything thoroughly.
  4. Gradually add flour and knead into a homogeneous dough, reminiscent of thick sour cream.
  5. Grease a baking sheet with vegetable oil and evenly distribute the dough over it, forming sides.
  6. Brush the dough with tomato sauce and place chopped tuna on it.
  7. Cut the onions and tomatoes into half rings and sprinkle on top of the fish.
  8. Cut the olives into slices and add to the filling.
  9. Grate the cheese on a coarse grater and sprinkle it generously on the pizza.
  10. Place the baking sheet in the oven for 20-25 minutes, setting the temperature to 180 degrees.

Pizza in a slow cooker turns out no worse than in the oven. At the same time, it certainly won’t burn, it will remain soft and juicy. You can put as much cheese in a dish as you want - the more of it, the tastier the pizza. Gouda or Mozzarella are best.

Ingredients:

  • 3 glasses of kefir;
  • 1 egg;
  • ½ tsp. salt;
  • ½ tsp. soda;
  • 2 cups of flour;
  • 200 g minced meat;
  • 2 tomatoes;
  • 200 g pickled cucumbers;
  • 1 onion;
  • Olives;
  • Hard cheese;
  • Ketchup, mayonnaise.

Cooking method:

  1. Pour kefir into a deep container and add soda to it.
  2. After 5 minutes, beat in the egg, add salt and flour, knead the batter
  3. Finely chop the onion and mix with the minced meat, place in a multicooker bowl greased with vegetable oil.
  4. Fry the minced meat in the “Baking” mode for 20 minutes, stirring occasionally with a spatula, then transfer to a plate.
  5. Cut tomatoes, cucumbers and olives into slices.
  6. Pour the dough into the multicooker bowl and place the minced meat on top.
  7. Place vegetables and olives on top of the minced meat, grease everything with mayonnaise and ketchup.
  8. Grate the cheese on a coarse grater and sprinkle on the dish.
  9. Close the multicooker lid and cook the pizza for 40 minutes in the same mode.

In pizzerias, pizza is prepared in literally 5 minutes, but at home you usually have to wait up to half an hour! This problem can be instantly solved by using a regular frying pan. The dough is fried on it in a matter of minutes, and the filling is used in its finished form, which does not require special heat treatment. Tartar sauce can be replaced with any other sauce or just regular mayonnaise.

  • 9 tbsp. l. flour;
  • 4 tbsp. l. mayonnaise;
  • 2 eggs;
  • 200 ml kefir;
  • 10 olives;
  • 100 g sausage;
  • 100 g hard cheese;
  • 1 cucumber;
  • 1 tsp. vegetable oil;
  • Tartar sauce;
  • Salt pepper.

Cooking method:

  1. Chop the cucumber, olives and sausage in any convenient way and mix with tartar sauce.
  2. In a dough bowl, mix flour, eggs, mayonnaise, kefir and a little salt.
  3. Stir everything until smooth and pour into a heated frying pan.

Take:

  • Kefir (even expired is allowed) – 2 cups.
  • Eggs – a couple of pieces.
  • Flour – 2.5 cups.
  • Salt - half a small spoon.
  • Soda – ½ small spoon.
  • Vinegar - a drop to remove soda.

How to cook step by step:

  1. Beat the chilled eggs in a bowl (use a whisk, fork, mixer).
  2. Add salt and beat again. Continuing to work with the mixer, pour in the kefir.

You will need:

  • Kefir – 100 ml.
  • Flour – 0.5 kg.
  • Egg.
  • Soda - a teaspoon.
  • Vegetable oil – 20 ml.
  • Salt – a pinch.

Preparation:

  1. Combine kefir with salt and half the flour in a bowl.
  2. Separately, beat the eggs until foam appears.
  3. Add to the flour mixture, then pour in half the amount of vegetable oil.
  4. Continuing to work with the mixer, add the remaining flour. break up the lumps. If you think there is not enough oil, add it.
  5. Knead the mixture until it reaches a thick consistency, like pancakes. But don’t overdo it; the pizza dough shouldn’t be too thick. If the mixture is runny, add more flour.
  6. Leave the dough to sit (“set”) for a quarter of an hour.

Yeast dough for pizza with kefir

  • Yeast, quick - 3 teaspoons.

  1. Make the dough: pour warm water into a bowl, add sugar, shake and add instant yeast. Without making sudden movements, gently stir the contents and leave to “rise” for a quarter of an hour.

Making quick pizza dough with kefir is easy, and here is a recipe that does not require much time or effort. Mix a few ingredients quickly, scratch the bottom of the refrigerator - you'll probably find a piece of cheese and a tomato lying around.   • Kefir – 250 ml.
  • Flour – 2 cups.
  • Baking powder - a small spoon.
  • Egg.
  • Oil – 3 large spoons.
  • Salt.

How to make instant pizza:

  1. In addition to kefir, you can use expired or fresh sour cream or cottage cheese rubbed through a sieve to make pizza.
  2. To prepare, beat the egg with a whisk, add salt, pour in vegetable oil and part of the kefir.

Ingredients

100 ml kefir;

60 ml vegetable oil;

15 g sugar;

11 g dry instant yeast;

A pinch of salt;

One egg;

Half a kilo of wheat flour;

3 tbsp. l. vegetable oil;

80 g hot ketchup;

70 g hard cheese;

200 g chicken fillet;

100 g fresh pineapple;

80 g canned corn.

Cooking method:

1. Rinse the chicken fillet in cold water.

2. Place the fillets in a small saucepan.

3. Pour hot water (or boiling water).

4. Place the fillet to cook on the stove over moderate heat with the lid half-closed.

5. Pour room temperature kefir into a large bowl.

6. Add egg, salt and sugar. Mix lightly with a fork.

7. Pour dry yeast into the products.

8. Sift half of the flour directly into the bowl.

9. Sift the second half onto a clean kitchen counter.

10. Knead the dough by hand in a bowl.
