So far I’ve really enjoyed everything I’ve cooked. Today I’m sharing a classic recipe, shepherd’s pie, and even from Gordon Ramsay. Simple and very tasty!
Shepherd's Pie (eng. cottage pie, shepherd’s pie) - a casserole of meat and mashed potatoes, a traditional dish of British cuisine.

It is also called "cottage pie", a term coined in 1791 when potatoes were introduced as a staple food for the poorest people (who lived in "cottages" - small houses for rural workers).

The term "shepherd's pie" was not used until 1877, and since then it has sometimes (erroneously) been used as a full synonym for the term "cottage pie", regardless of whether the main ingredient is beef or lamb. True shepherd's pie is made only from mutton or lamb, since the English word "shepherd" means a shepherd who tends sheep and not some other livestock.

Ingredients:

Minced lamb - 1 kg (I have 800 g of beef mixed with pork)

Mashed potatoes - 1kg

Cheddar - 50g (I used Irish orange, hence the beautiful crust)

Leek - 1 stalk

Green onion - 4 feathers

Fresh rosemary - 1 tsp (I have a large sprig)

Garlic - 2 cloves

Worcestershire sauce - 1 tbsp (I used 2 tbsp)

Tomato paste - 1 tbsp (I have Chumak 70g)

Red wine - 300g

Meat broth - 1l (did not use)

Preparation:

1. Fry the minced meat with the addition of garlic, salt and pepper.

2. Cut the dense, light part of the leek into strips and fry until tender, adding Worcestershire sauce and tomato paste or canned tomatoes. Add the already fried minced meat (without liquid) to the onion and deglaze with red wine for about 5 minutes. Add a sprig of rosemary broken into two parts and simmer over moderate heat for 10 minutes.

3. Turn pre-boiled potatoes into puree, adding butter and chopped green onions.

4. Transfer the fried minced meat into a baking dish (along with rosemary sprigs). This is the bottom layer of shepherd's pie. Spread mashed potatoes evenly on top. Using a fork, draw a random grid on the surface of the puree in order to get a beautiful, golden brown, crispy crust when baking. Sprinkle the pie with grated cheese.

5. Bake for 20 minutes at 180 degrees, until golden brown.

Beef Wellington is very quick and easy to prepare, use this recipe from Gordon Ramsay and you will get a stunningly beautiful and tasty dish.

Ingredients

  • 750 gr. beef fillet
  • 400 gr. fresh mushrooms
  • 6 slices Parma ham
  • 1 tbsp. l. English mustard
  • 500 gr. ready-made unleavened puff pastry
  • sifted flour
  • 2 eggs (you only need the yolks)
  • 500 gr. small potatoes
  • 1 head of garlic
  • 1 sprig fresh thyme
  • 2 large heads of lettuce
  • olive oil
  • salt and freshly ground black pepper

How to prepare beef Wellington according to Gordon Ramsay's recipe

1. Preheat the oven to 200°C.


2. Coarsely chop the mushrooms, place them in a food processor with a small amount of seasoning, and pulse until smooth.


3. Place the frying pan over high heat and add the mushroom mixture. Cook it for 10 minutes, stirring to evaporate excess liquid.


4. Heat another pan and add a little olive oil. Season the beef and sear it in the hot pan for 30 seconds on each side.


5. According to Ramsay's recipe, remove the beef from the pan and let it cool, then rub the entire surface with mustard.


6. Place a layer of cling film on a work surface and overlap a couple of rows of Parma ham.


7. Next, according to the recipe, using a spatula, spread the mushroom paste on the surface of the ham, then place the fried beef fillet in the middle.


8. Cover the beef with cling film and carefully roll it into a roll along with the film.


9. Twist the ends of the cling film. Place the beef in the refrigerator for 15-20 minutes to allow the meatloaf to hold its shape.


10. Then, according to Ramsay's recipe, roll out the unleavened puff pastry into a large rectangle 2-3 mm thick. Remove the plastic wrap from the beef, then place it in the center of the rolled out dough. Brush the dough around the piece of meat with egg yolk.


11. Wrap the beef in the dough, cut off the excess dough with a knife. Turn the beef over, seam side down, and place on a baking sheet. Place the pan in the refrigerator for 5-10 minutes.


12. Brush the beef Wellington with beaten egg yolk. Make small cuts on the dough, the distance between which will be 1 cm. Sprinkle sea salt on top and bake in the oven for 20 minutes. After 20 minutes, reduce the temperature to 180°C and continue baking the beef in the dough for another 15 minutes.


13. Next, according to Chef Ramsay's recipe, peel the potatoes and blanch them in salted water for 10-12 minutes. Drain it and cut it into four pieces.


14. Once you have removed the beef Wellington from the oven, let it sit for 10-15 minutes before cutting into slices.


15. Heat some olive oil in a frying pan and cut the head of garlic in half. According to the recipe, fry the potatoes, covered, with garlic and thyme until golden brown and crispy. After this, season the dish to taste.


16. To prepare the salad, take large, washed and dried leaves. Heat a saucepan and add a little olive oil. Add lettuce leaves, season with salt and pepper, and fry, covered, over high heat for just under a minute.


17. Cut Gordon Ramsay's Beef Wellington into pieces until the meat is pink in the center. Serve the meat with fried potatoes and salad.

How to make Meat Pie from Gordon Ramsay (Shepherd's Pie)

Step-by-step recipe for Meat Pie from Gordon Ramsay (Shepherd's Pie) with photo

1. Boil water in a saucepan, add salt and peeled, roughly chopped potatoes, and set the timer for 15 minutes.

2. As soon as you hear the timer, remove the potatoes and drain the water. Return the potatoes to the pan or medium bowl. Purée the potatoes with cream, butter, egg yolks and Parmesan cheese. Salt and pepper to taste. Leave it warm.

3. Preheat the oven to 200 degrees.

4. Add olive oil to a hot, large frying pan, then add the ground meat.

5. Stir the meat like your life depends on it for a few minutes until it's nice and brown and broken into very small pieces. Add the rosemary, thyme and minced garlic, then cook a little more.

6. Quickly add grated carrots, grated onions, stir and fry a little longer. The main idea of ​​what we should achieve at this stage is for the food to reach the consistency of minced meat.

7. Add Worcestershire sauce, stir, add tomato puree, stir, add red wine and cook for a minute or two. Add chicken broth and cook for another 3 minutes. Place everything in a baking dish.

8. Place mashed potatoes on top of the minced meat. Level the puree with the bottom of a spoon and then sprinkle a generous amount of Parmesan cheese on top. Poke the top with a fork several times to give the mashed potatoes a spiky appearance and leave the casserole in the oven for 18-20 minutes until the potatoes are brown and the pie is ready.

9. Serve it and watch people melt!

01 First you need to start preparing the puree. Peel the potatoes, cut the tubers into four parts and place in a pan of boiled salted water. Set the timer for 15 minutes or until fully cooked.

02 Now let's move on to the filling of our shepherd's pie. First, pour olive oil into a heated large frying pan, then add the minced meat, shifting it into pieces. Gradually fry the minced meat until golden brown for several minutes, stirring constantly with a wooden spoon. Squeeze the garlic here through a press. After frying, the minced meat should fall apart into very small pieces. Transfer to a plate.

03 In the same frying pan, pour a little olive oil and fry the chopped onion and leek over medium heat for 5 minutes. While stirring, add Worcestershire sauce and tomato paste (or canned tomatoes).

04 Return the fried minced meat to the pan and stir. Pour in the red wine and cook for a minute or two to evaporate the alcohol. Then add chicken broth and cook for 3 minutes.

05 Take rosemary, separate the greens from the stems and sprinkle our minced meat with it. Season with salt and pepper. Cook over low heat for 10-15 minutes.

06 Without wasting time, prepare the puree. Drain the water and mash the potatoes using a potato masher. Finely chop the green onions and add to the puree along with milk and butter. Stir.

07 Place the prepared minced meat in a baking dish, carefully spread the puree on top, and use a spoon to level the surface of the pie. Then use a fork to pierce it several times to give it a distinctive look. Sprinkle generously with grated cheese on top.

08 Place the pie in an oven preheated to 180 º C and bake for 20 minutes until golden brown.

Almost a British classic

If you believe the legends of famous chefs, English shepherd's pie was first prepared in Scotland and the northern part of Britain. Its essential ingredients are mashed potatoes and lamb or lamb. That's all the ingredients needed to prepare such a dish.

As the geography of this dish expanded, other products began to be added to the pie, for example, hard cheese, mushrooms, vegetables, seasonings, spices, and sauces. And of course, lamb is often replaced with other types of meat.

On a note! Jamie Oliver's shepherd's pie is prepared according to the author's recipe and always from young lamb fillet. The famous chef adds tomatoes, seasonings, spices and even green peas to his dish.

Let's try to prepare a British dish in the Russian way, slightly simplifying and modifying Shepard Pie's recipe.

Compound:

  • 0.5 kg pork tenderloin;
  • onion head;
  • 50 g butter;
  • 1 kg of potatoes;
  • 150 ml pasteurized cow's milk;
  • 0.1 kg of hard cheese;
  • 1 chicken egg;
  • 50 ml mayonnaise;
  • 30 ml refined olive oil;
  • seasonings and salt to taste.

But here comes a recipe from another famous chef, who is happy to share his secrets with us. He makes his own shepherd's pie. A mixture of spices and seasonings gives the pie an amazing taste and unique aroma.

Compound:

  • 2 tbsp. l. classic Worcestershire sauce;
  • 1 tbsp. red wine;
  • 500 g lamb fillet;
  • 2 pcs. garlic cloves;
  • rosemary sprig - 1 pc.;
  • 1 tbsp. l. tomato puree;
  • 500 ml chicken broth;
  • 100 g Parmesan cheese;
  • carrots - 1 root vegetable;
  • a bunch of fresh thyme;
  • 2 pcs. chicken eggs;
  • 1 kg of potatoes;
  • refined olive oil;
  • spices and herbs to taste.

Preparation:

  1. Rinse the lamb fillet, preferably chilled, under running water.
  2. Dry it and grind it in a meat grinder.
  3. Heat refined olive oil in a saucepan or frying pan.
  4. Add the minced meat and fry it over maximum heat for about 3 minutes.
  5. Meanwhile, grate the carrots.
  6. Finely chop the onion and garlic cloves with a knife.
  7. Add these vegetables to the minced meat and mix well.
  8. After a couple of minutes, season the meat with classic Worcestershire sauce.
  9. Stir and add red wine.
  10. Add tomato puree.
  11. Mix thoroughly again and continue to simmer over low heat.
  12. Grind the thyme and rosemary sprig.
  13. Add to meat.
  14. When all the liquid has evaporated, add chicken broth.
  15. Bring the broth to a boil.
  16. Then reduce the heat and continue to simmer the filling until thickened.
  17. We prepare mashed potatoes in the usual way.
  18. Add beaten eggs and 2 tbsp to mashed potatoes. l. finely chopped Parmesan.
  19. Beat with an immersion blender.
  20. Place the potato mixture in a heat-resistant form and place the meat on top.
  21. Sprinkle with grated cheese.
  22. Bake at 200° for 20 minutes.

"Eating at home"

Many housewives are interested in learning the secrets of making shepherd's pie from Yulia Vysotskaya. In general, the recipe does not change, but still there are some tricks.

Compound:

  • onion head;
  • 4 things. potato tubers;
  • 250 g minced beef;
  • 1 carrot root;
  • 30 g butter;
  • 1-2 pcs. garlic cloves;
  • 2 tbsp. l. tomato paste;
  • ½ tsp. dried thyme;
  • bay leaf, salt to taste;
  • ¼ chili pepper;
  • 0.1 l cream;
  • ½ tbsp. pasteurized cow's milk.

Preparation:

  1. We peel the vegetables and chop them.
  2. In a frying pan, saute chopped onion, garlic and chili pepper.
  3. After a few minutes, add the minced meat and fry it until golden brown.
  4. Add about 0.5 tbsp. filtered water, tomato paste. We continue to simmer the meat filling.
  5. Salt it, season with spices, add a bay leaf.
  6. In a separate bowl, combine soft butter, pasteurized cow's milk and cream.
  7. Add thyme.
  8. Whisk these ingredients thoroughly.
  9. Pour this mixture over the boiled potatoes and beat until the consistency of puree.
  10. Place the meat filling on the bottom of the ovenproof dish and mashed potatoes on top.
  11. Bake for exactly 8 minutes at a temperature of 220°.
